Thailand, A Place Tony Couldn't Leave Behind | Anthony Bourdain Parts Unknown | Season 3 Episode 8
Anthony Bourdain Parts Unknown · · 1 views
Description
Anthony Bourdain returns to northern Thailand—Chiang Mai province, once known as the kingdom of a million rice fields—alongside chef Andy Ricker, the American behind Pok Pok, who has spent twenty-five years crossing back and forth in pursuit of a cuisine most of the world has never really tasted.
In the rice country outside the city, Bourdain finds a farmhouse where breakfast arrives with lao khao, rice whiskey distilled out back and pounded with a wooden mallet, poured by hosts who will not let a glass sit empty. Over sticky rice and nam prik ong, Ricker explains the greeting that translates as "have you eaten rice yet" and means how are you—because if you haven't eaten, things are not going well. The trip moves on to pork in every form the north knows: grilled pigtail, sai ua herbal sausage, brain grilled in banana leaf, and lu, a soup of raw blood scrunched with lemongrass. Tony calls it a horror movie, then calls it the best meal he has ever had in Thailand. It is a journey so immersive that it exposes what this place has quietly taken from both men—the ability to be satisfied by anywhere else.
From farmhouse stills and roadside lap counters to tuk-tuk crawls, midnight nam prik and a family restaurant where the beef is hammered into ropey threads, this episode is a portrait of the region that ruined Anthony Bourdain for his old life.
