LAY HO MA (How's it going in Cantonese)! Join me in this episode and let's make this delicious creamy mushroom udon noodles recipe together! Let's begin!
INGREDIENTS:
225g soft tofu
1/4 cup water
100g fresh shiitake mushrooms
2 pieces garlic
1 small piece ginger
2 sticks green onions
250g udon noodles
1 + 1 tsp chili oil (https://youtu.be/IkBWsfsEVkM)
1 heaping tbsp doubanjiang
1 tbsp peanut butter
1 tsp soy sauce
1 tsp white sesame seeds
DIRECTIONS:
1. Bring a small pot of water to boil for the noodles. Place the soft tofu and 1/4 cup water into a blender. Blend on high until liquified, then set aside.
2. Use a paper towel to brush off any dirt from the fresh shiitake mushrooms. Then, remove and discard the end bit from the stalk and slice the mushrooms. Fine chop the garlic and ginger. Separate the white and green parts from the green onions and chop
3. Heat up a sauté pan to medium heat. Add in the shiitake mushrooms and dry sauté for 3-4mins. In the meantime, boil the udon noodles to package instructions. Add 1 tsp of chili oil to the mushrooms and sauté for a couple of minutes
4. Add in the garlic, ginger, and green onions (white parts). Add in the doubanjiang and peanut butter. Give the pan a good stir. Then, drain the udon noodles and add to the pan along with the soy sauce. Stir to combine. Add in the blended tofu and give the pan a good stir and turn off the heat
5. Plate the noodles and garnish with some green onions (green parts), some white sesame seeds, and a drizzle of chili oil to serve
